The Blue Seal Evolution Series is the culmination of a process in which the Blue Seal range has been completely re-designed.
The result is an expanded, more functional range of commercial kitchen equipment offering more configuration options and blistering performance. Improved streamlining creates a continuous workspace when units are placed in a line-up, while the 812mm of depth gives plenty of cooking area, even when you are forced to push culinary frontiers from the confines of a small kitchen.
When it comes to selecting tops and bottoms, the Blue Seal Evolution Series offers a level of choice not seen before. With a bigger range of equipment, you have even more flexibility to configure your kitchen exactly the way you want it.
Cooktops
Blue Seal Evolution Series cooktops are about functionality and performance. If power to burn is what you need, the open top burners on the gas option deliver up to 28MJ per open burner, with cast iron construction and forged brass caps for even flame spread. The electric models are perfect commercial catering equipment solution because they utillise 2.4kW radiant elements, with higher output griddle elements and optional solid plates available, providing consistent and reliable heat across a range of cooking application.
Thanks to heavyweight iron castings and vitreous enamel finish, these cooktops withstand the daily rigours of a busy kitchen. Extended pot support fingers add stability, while robust control knobs allow precise high-to-low heat adjustments.Gas cooktops feature cast iron construction with forged brass caps for consistent flame spread, plus a non-clogging design for optimum performance. From high to low heat/simmer, robust control knobs allow you to make subtle adjustments to get the heat setting just right. Made from cast iron for lasting performance, burners have a forged brass cap for consistent flame spread. A non-clogging design ensures optimum burner performance.
When the job requires a change of cooking surface, both gas and electric models can accommodate 300, 450, 600, 900 or 1200mm griddle plates in smooth or ribbed machine-finished mild steel. Chunky controls allow precise adjustment across the entire heat spectrum, while clear, non-fade markings and strengthened shaft sleeves make regular knob replacement a thing of the past.
Induction Cooktops
The Blue Seal Evolution Series range of induction cooktops features advanced pan detection, automatically switching off when a cooking pan is removed. Available in 450mm and 900mm sizes, these units come in bench, leg stand, or cabinet base configurations depending on the model.
Each cooktop has heavy-duty induction zones with flexible power controls, allowing chefs to adjust heat precisely across the cooking surface. The robust 6mm thick ceramic glass enables pans to glide smoothly, combined with the signature Blue Seal Evolution welded 1.5mm stainless steel bull nose.
Controls are intuitive, with a large knob for each zone and an indicator light for pan detection. Blue Seal Evolution induction cooktops deliver responsive, energy-efficient performance, helping to reduce latent heat in the cooking area while maintaining precise cooking results.
Oven Ranges
Whatever the scale of operation, Blue Seal Evolution Series oven ranges offer flexible cooking solutions for commercial kitchens, with gas, electric, and induction options available across the range. Gas models are available with static ovens for traditional radiant heat cooking, or convection ovens with fan-forced heat circulation for faster, more even cooking results. A variety of cooktop configurations are available, including open burners, target tops, and griddle plates to suit different cooking applications.
Electric oven ranges are available with static or convection ovens, providing a high-performance alternative where gas is unavailable or electric cooking is preferred. Electric cooktops feature heavy-duty 2.4kW radiant elements, 2kW solid plates, sealed hob designs, and electric griddle options, offering flexibility for a wide range of cooking styles.
The induction convection oven ranges combine responsive induction cooktops with high-performance 900mm convection ovens, delivering precise control and energy-efficient cooking performance.
Within the oven cavity, cast iron sole plates help distribute heat evenly in static ovens, while convection models incorporate circulation fans to improve heat distribution, reduce cooking times, and allow food to be cooked at lower temperatures while maintaining consistent results.
Blue Seal Evolution Series gas and electric oven ranges are available in 600 mm, 750 mm, 900 mm and 1200 mm widths, including double oven configurations on selected models, providing flexibility for kitchens of all sizes.
Target Tops
Blue Seal Evolution Series 900mm target tops come as stand-alone hobs, or with a choice of four base units – cabinet base, leg stand, refrigeration base, or oven base (static/convection, gas/electric).
A high output, dual ring cast-iron burner enables the super heavy-duty Target Top castings to deliver outstanding heat control and recovery.A burner box lined with 50mm refractory ceramic blocks provides excellent thermal efficiency.
Electric Solid Tops
Blue Seal Evolution Series electric 900mm solid tops provide a heavy-duty cooking surface designed for high heat retention and even heat distribution.
The solid steel cooking surface allows multiple pots and pans to be positioned anywhere across the cooking area, making it ideal for busy kitchens requiring flexible cooking capacity. Electric solid tops are available as bench models, with cabinet bases, leg stands or refrigerated bases, and can also be supplied as oven range configurations.
Griddles
Blue Seal Evolution Series heavy-duty gas and electric griddles feature seamless welded construction and a 20mm thick plate for excellent heat retention and distribution. The range is available in 450, 600, 900 and 1200mm widths, with configurations including bench models, cabinet bases, leg stands and refrigerated bases to suit different kitchen layouts.
For operations requiring both grilling and toasting, the range also includes the griddle toaster, which combines a griddle plate above a toasting rack below, allowing operators to grill and toast simultaneously without compromising performance.
Chargrills/ Barbecues
The sheer performance of the Blue Seal Evolution Series chargrills / barbecues deliver high-performance cooking through powerful stainless steel burners and radiants that seal in meat flavours. Heavy-duty cast iron grates with grooved fins and an inclined design reduce flare by directing grease into a front collection channel. Interchangeable 300 and 450mm drop-on griddle sections add versatility for menu variety. The range is available in 300, 450, 600, 900 and 1200mm widths, with bench, leg stand, and cabinet base configurations. Electric models are also offered for kitchens where gas is not available, maintaining the same heavy-duty performance and durability.
Salamanders
Designed where high-speed performance meets versatility, these Blue Seal Evolution salamanders are great for melting, grilling, gratinating and toasting. Gas models use energy-efficient infra-red burners for fast, even results, while electric models feature twin elements designs and adjustable-height ultra-rapid options for precise grilling. \Both gas and electric salamanders accept a Gastronorm GN 1/1 tray, and an optional branding plate is ideal for cooking fish or steak. The range is available in 600 and 900mm widths, covering bench and wall-mount applications to suit any commercial kitchen layout.
Deep Fryers & Filtamax Filtration
Blue Seal Evolution has long been recognised for the quality and performance of its deep fryers. The series takes this a stage further with a sleeker, more streamlined range — available in 400, 450 and 600mm widths with single or twin pan configurations to suit any commercial kitchen.
Gas fryers feature Blue Seal Evolution’s unique Vee Ray technology, with patented infra-red burners for fast recovery and consistent frying, while electric fryers deliver reliable, even heating for all frying applications. All units are offered with mechanical or digital controls, with digital models providing precise temperature management, multiple product timers, and independent control on twin pan units.
Filtamax filtration systems are designed to work seamlessly with these fryers, removing food particles, extending oil life, and reducing replacement costs — easy to operate in just 10 minutes for a 26-litre tank and storable neatly under the fryer when not in use.
Bratt Pans
Big on performance, the Blue Seal Evolution Series range of tilting bratt pans, available in 80-litre (900mm) and 120-litre (1200mm) sizes in gas or electic models. All units feature manual or electric pan tilting for easy portion control, combined with heavy-duty construction, easy-clean surfaces, and straightforward service access. Designed for consistent performance and durability, these bratt pans are a versatile addition to any Evolution Series kitchen.
Pasta Cookers
Designed for speed and efficiency, the Blue Seal Evolution Series pasta cookers are fully modular and feature a unique pan design for the continuous production of perfectly cooked pasta. Gas models use a patented infra-red burner system, while electric models rely on powerful heating elements, both maintaining consistent water temperature and fast recovery from low heat settings. The standard four-basket configuration allows up to four different pastas to be cooked simultaneously, making these units ideal for high-volume commercial kitchens.
Induction Wok
Fast, precise, and energy-efficient, the Blue Seal Evolution induction wok deliver the high heat required for authentic stir-fry cooking. Using advanced induction technology, they heat quickly and provide responsive temperature control while maintaining the safety and efficiency benefits of induction. Units are available in 450mm width, with bench, leg stand, or cabinet base configurations to suit any commercial kitchen layout.
