The passionate restaurateur talks to us about his labour of love.<\/p>\n<p>Like many second-generation Australians with European heritage, Simon Gloftis grew up in a multicultural household. Half Greek and half Polish, food played a prominent part in his childhood.<\/p>\n<p>Having spent many hours in the kitchen of his godfather\u2019s restaurant in Melbourne, hospitality seemed a natural progression. At just 21 years old he launched the first of a string of cafes.<\/p>\n<p>Then, with a few successful ventures under his belt, Gloftis decided to up the ante. At Nobby Beach he opened his now famous Greek establishment, <span style=\"color: #0000ff;\"><a style=\"color: #0000ff;\" href=\"http:\/\/hellenika.com.au\/\" target=\"_blank\">Hellenika<\/a><\/span>.<\/p>\n<p>\u201cIf you can\u2019t find it in Greece, then it\u2019s not on our menu. We don\u2019t do trends at all. Never have. We want it to be an authentic experience with sharp service.\u201d<\/p>\n<p>Following Hellenika\u2019s rapid success, Gloftis was ready for something new. Two years ago, still on the Gold Coast in nearby Burleigh Heads, he opened <span style=\"color: #0000ff;\"><a style=\"color: #0000ff;\" href=\"http:\/\/thefishhouse.com.au\/\" target=\"_blank\">The Fish House<\/a><\/span>.<\/p>\n<p>\u201cI love seafood, and I wanted a new challenge. The Fish House was a natural progression for me\u201d, he says. \u201cOnce I had found a suitable site, I spoke with the owners and we did a deal over a coffee table. Everyone kept their word, and incredibly, it all just worked out\u201d.<\/p>\n<p>Since launching, The Fish House has become one of Australia\u2019s best places to dine, attracting a raft of glowing reviews. Gourmet Traveller listed it as one of the Top 100 Best Restaurants in Australia. The Weekend Australian rated it one of the Hottest 50 Restaurants. The Brisbane Times\u2019 Good Food Guide 2014\/2015 awarded The Fish House the \u2018Regional Restaurant of the Year\u2019, describing it as \u201cthe stuff of holiday dreams\u201d.<\/p>\n<p>Gloftis himself was awarded the 2014 Gold Coast Young Entrepreneur Award in the Hospitality, Tourism and Events category &#8211; an indication of his relentless drive and entrepreneurial spirit.<\/p>\n<p>\u201cBoth of the restaurants have been incredibly time consuming and have required a lot of hard work &#8211; and even though they\u2019ve aged me by about ten years &#8211; they\u2019ve definitely been worth it,\u201d he admits.<\/p>\n[\/spb_text_block] [spb_image image=&#8221;2127&#8243; image_size=&#8221;full&#8221; frame=&#8221;noframe&#8221; intro_animation=&#8221;none&#8221; animation_delay=&#8221;200&#8243; fullwidth=&#8221;no&#8221; lightbox=&#8221;yes&#8221; link_target=&#8221;_self&#8221; caption_pos=&#8221;hover&#8221; width=&#8221;1\/3&#8243; el_position=&#8221;first&#8221;] [spb_text_block title=&#8221;IN THE KITCHEN&#8221; animation=&#8221;none&#8221; animation_delay=&#8221;0&#8243; padding_vertical=&#8221;0&#8243; padding_horizontal=&#8221;0&#8243; width=&#8221;2\/3&#8243; el_position=&#8221;last&#8221;]\n<p>When it came to choosing kitchen equipment for both restaurants, Gloftis explains Moffat was a very natural choice. After all, it\u2019s been in his cafes since he was 21.In Hellenika, Gloftis implemented two\u00a0<span style=\"color: #0000ff;\"><a style=\"color: #0000ff;\" href=\"http:\/\/www.moffat.com.au\/brands\/convotherm\" target=\"_blank\">Convotherm combi ovens<\/a><\/span>, various pieces from the <span style=\"color: #0000ff;\"><a style=\"color: #0000ff;\" href=\"http:\/\/www.moffat.com.au\/brands\/waldorf\" target=\"_blank\">Waldorf 800 Series<\/a><\/span>, including a cooktop and a fryer, a Washtech dishwasher and a <span style=\"color: #0000ff;\"><a style=\"color: #0000ff;\" href=\"http:\/\/www.moffat.com.au\/products-list?f[0]=field_product_category_two%3A3583&amp;f[1]=field_product_category_three%3A5622&amp;f%5B0%5D=field_product_category_two%3A3583&amp;f%5B1%5D=field_product_brand%3A2006\" target=\"_blank\">Turbofan convection oven<\/a><\/span>.<\/p>\n<p>At The Fish House he chose a wide range of Moffat equipment including two <a href=\"http:\/\/www.moffat.com.au\/products-list?f[0]=field_product_brand%3A2010&amp;f[0]=field_product_brand%3A2010&amp;f[1]=field_products_config%3A8775\" target=\"_blank\"><span style=\"color: #0000ff;\">Convotherm mini combi ovens<\/span>,<\/a> a <span style=\"color: #0000ff;\"><a style=\"color: #0000ff;\" href=\"http:\/\/www.moffat.com.au\/products-list?f[0]=field_product_category_two%3A8404\" target=\"_blank\">Waldorf target top with oven<\/a><\/span>, two <span style=\"color: #0000ff;\"><a style=\"color: #0000ff;\" href=\"http:\/\/www.moffat.com.au\/products-list?f[0]=field_product_category_two%3A3633&amp;f[2]=field_product_category_three%3A8424&amp;f[1]=field_product_brand%3A2002&amp;f[0]=field_product_category_two%3A3633&amp;f[1]=field_product_brand%3A2002&amp;f[2]=field_products_config%3A3989\" target=\"_blank\">Waldorf twin pan deep fryers<\/a><\/span> and a <span style=\"color: #0000ff;\"><a style=\"color: #0000ff;\" href=\"http:\/\/www.moffat.com.au\/products-list?f[0]=field_product_category_two%3A3629&amp;f[0]=field_product_category_two%3A3629&amp;f[1]=field_product_brand%3A2002\" target=\"_blank\">Waldorf salamander<\/a><\/span>, a\u00a0<a href=\"http:\/\/www.moffat.com.au\/brands\/turbofan\" target=\"_blank\"><span style=\"color: #0000ff;\">Turbofan convection oven<\/span><\/a> plus a <span style=\"color: #0000ff;\"><a style=\"color: #0000ff;\" href=\"http:\/\/www.moffat.com.au\/products-list?f[0]=field_product_category_two%3A3614&amp;f[0]=field_product_category_two%3A3614&amp;f[1]=field_products_capacity%3A3141\" target=\"_blank\">Waldorf six burner cooktop<\/a><\/span>.<\/p>\n<p>\u201cMoffat really suits my needs, and I have never had any issues,\u201d he says. \u201cIf something does go wrong, it\u2019s fixed quickly, which is definitely what you need when you\u2019re running a business.\u201d<\/p>\n<p>Gloftis concludes, \u201cOverall, I have found the equipment that we use in both restaurants to be exactly what we need.
